Crockpot Salsa Verde Chicken Recipe

Recipe: (makes 4 servings)

  • 1 lb chicken breasts

  • 16 oz jar salsa verde mild

  • 1 bell pepper, washed and diced

  • 1/2 of 5oz container of baby spinach, washed

  • 1 tsp Cumin

  • 1 tsp Paprika

  • 1 TBSP onion powder

  • Salt + pepper to taste

  • Optional: rice or tortillas, shredded cheese

Instructions:

  1. Prepare your crockpot with a plastic liner for easier clean up.

  2. Clean chicken breast to add to the crockpot, then pour salsa over chicken. Add spices to the crockpot, then top with diced bell pepper and spinach.

  3. Place lid on top. Set heat to high to cook for 3.5 hours or low for 5.5 hours (until chicken reaches 165 degrees).

  4. Serve over rice or in whole wheat tortillas.
